Escovitch: deep fried snapper smothered in pickling sauce made from vinegar, pimento, onions, pepper and carrots. 
Choice of Escovitched, Fried (no sauce), Brown Stew, Grilled with Lemon Butter sauce, or Grilled with Jerk sauce served with choice of up to 2 sides
